For the team behind Loving Lefse, this isn’t just a food business. It’s a tradition that has been passed down through more than five generations.
The story begins with their great-great grandmother, Angeline Pierce, who first taught the family how to make lefse. Over the years, the recipe and the ritual of making it became something much bigger than food. It became a family tradition.
Every holiday season, the family gathered around the table rolling dough, cooking lefse, and sharing stories. It was a time filled with laughter, connection, and the simple joy of doing something together that had been done for generations before them.
What is Lefse?
Traditionally served with butter, cinnamon, and sugar, lefse is a Norwegian flatbread that’s soft, comforting, and simple in the best way. Loving Lefse honors that classic preparation while also exploring both sweet and savory versions, giving people both a taste of tradition and something new to try.

Breakfast Lefse
Filled with chorizo eggs, bacon, beef tallow fries, and house-made chipotle mayo. A hearty option that pairs perfectly with a morning coffee.
Cin-a-Lefse
Filled with warm cinnamon butter and topped with house-made cream cheese frosting. The team likes to describe it as the middle of a cinnamon roll.
Italian Beef & Cheese
Slow-cooked shredded Italian beef with fresh pepperoncinis and melted cheese, finished with their specialty cheese crust.
Their lefse is also made with Idaho potatoes, bringing a local touch to a recipe that has been passed down through generations.
What began as a family recipe shared around the holidays has grown into something they’re proud to bring to the Boise community.
Meet the Founders
Loving Lefse is run by siblings John and Angeline, who turned a family tradition into a business they now share with the Boise community.
Both are Boise State University alumni who studied business and entrepreneurship before deciding to bring their family’s lefse tradition to life in a new way. Their time in Boise helped shape the idea that what had always been a meaningful part of their family could also become something they shared with others.
When John first moved to Boise for school, the rest of the family quickly fell in love with the city. What started as visits soon turned into something more permanent as the family realized Boise felt like home.
Not long after, they made the decision to bring their long-standing family tradition with them and build Loving Lefse here. What had once been a holiday ritual around the kitchen table became an opportunity to introduce more people to lefse and the sense of warmth and connection that always came with it.
Today, John and Angeline continue that tradition through their business, serving lefse made from the same family recipe and sharing a piece of their heritage with the community that inspired them to start.

This season, Loving Lefse will be serving all season long as the permanent food truck at Green Acres, bringing their family tradition to guests all summer.
Alongside their sweet and savory lefse, they also serve coffee, espresso, and other café favorites, making it an easy stop whether you're looking for a morning pick-me-up or a midday treat.
